Ingredients

  • (2) 6” round flatbread or pizza dough
  • 8oz mascarpone cheese, softened
  • 1 lime, zested
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract
  • 1 (8oz) jar of Laura Ann’s Jams BLUEBERRY BASIL (other jams work too)

Toppings can be: nuts, shredded sweetened coconut, (that is what I used above) or even shaved chocolate! Get creative.

Directions

This is a dessert pizza that will keep you coming back for more! Addictive and pretty amazing. I found myself making this one for breakfast and brunch as well as adding it to my favorite party snack tables. :-)

  1. Preheat the grill or grill pan.
  2. Grill the flatbread just to warm and to achieve the grill marks. If using pizza dough, roll out into 6-inch diameters and cook over lightly oiled grill until cooked through.
  3. In a bowl, cream together the mascarpone, lime zest, powdered sugar and vanilla extract.
  4. Spread the cheese mixture onto the flatbread up to ¼-inch away from the edge.
  5. Spoon half a jar of the jam onto each flatbread and carefully spread the jam over the cheese mixture, making sure not to mix the jam into the cheese.
  6. Sprinkle the pizzas with the desired toppings.
  7. Slice and serve!
