California Baked French Toast

Custard base
- 8ea eggs, beaten
- 1 cup milk
- ¼ cup crème fraiche
- ¼ cup maple syrup
Whipped crème fraiche
- 1 cup crème fraiche
- 1 cup whipping cream
- 2 tbsp simple syrup
Caramel Sauce
- 1.5 cups sugar
- 3/4 cup butter
- 1/2 tsp salt
French toast – 12 servings
- Serving dish: small rectangle staub cast iron
- 6 slices brioche ¾” cut, cut in half to make rectangles
- Custard base
- 1 cup caramel sauce
- 1/2 cup of your favorite jam (we used Classic Blueberry)
