- Prepackaged pizza dough
- Yellow or sweet onion
- Bacon (regular or turkey), chopped
- Mozzarella cheese, shredded
- Parmesan-Reggiano cheese, shredded
- Laura Ann’s Fabulous Fig jam
- Green onion, sliced into small green rounds
- Olive oil
Coat the bottom of a cast iron skillet with olive oil, and place the skillet on a stovetop burner set to medium heat.
Remove the skin and any protruding roots from the onion, then cut it in half. Laying the onion halves cut side down, slice each half lengthwise, making thin slices. Add to the skillet, stirring to coat the onions with the olive oil. Make sure the onions are spread evenly across the bottom of the skillet. Stir occasionally, monitoring closely to make sure the onions don’t burn; lower the heat, if necessary. If the onions seem to be drying out, add a little water or olive oil. Let cook for half an hour to an hour, stirring frequently. When the onions are very limp and a rich, browned color, remove them to a bowl.
Roll out the prepackaged pizza dough. Top with the caramelized onions, bacon pieces, the shredded cheeses, and Laura Ann's Fabulous Fig jam. Sprinkle with green onion rounds. Place on a baking sheet or pizza stone, and bake according to pizza dough instructions. Indulge!
