Raspberry Habanero Lamingtons

6 large eggs, at room temperature
3/4 cup (150 g) sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1 1/3 cup (175 g) cake flour
2 1/2 ounces (70 g) melted unsalted butter, at room temperature
1 – 8oz jar Laura Ann’s Jams Raspberry Habanero
3 cup (200 g) unsweetened shredded coconut
Vegan Jam-Filled Biscotti Cookies

- ¾ tsp baking soda
- ½ tsp salt
- 1 cup whole wheat pastry flour
- 2 ½ cups raw, unsalted almonds
- 1 ½ cups white whole wheat flour
- 1/8 cup sunflower oil (OR organic canola or coconut oil)
- 2 tsp almond extract
- 1/8 cup almond milk
- ¼ cup apple juice
- 1 cup maple syrup
- 1 cup your favorite flavor Laura Ann’s Jam
Blueberry Basil Jamizza!

- (2) 6” round flatbread or pizza dough
- 8oz mascarpone cheese, softened
- 1 lime, zested
- 2 tablespoons powdered sugar
- ½ teaspoon vanilla extract
- 1 (8oz) jar of Laura Ann’s Jams BLUEBERRY BASIL (other jams work too)
Toppings can be: nuts, shredded sweetened coconut, (that is what I used above) or even shaved chocolate! Get creative.
