Robin at Mud Creek Ranch, one of my citrus farmers, talked me into trying to make a Bergamont marmalade. My kitchen smells like a spa! I love it. I had never used a bergamot before. Had never really KNEW what one was till I cooked with it. It is AMAZING and fragrant. The marmalade turned out AMAZING. I am looking forward to making more of it if Mud Creek Ranch still has them when I get back from France! I only made 1 beautiful batch and gave some to the restaurants.
