Lo-FI Mini Blueberry Cashew Cheesecake : Vegan NO BAKE Raw No Sugar

My new favorite S.O.S. free dessert

Step 1 make:

Blueberry Cashew-Cream Cheese

  • 3/4 cup cashew butter
  • 1 1/2 tbsp. fresh lemon juice
  • 1/2 tsp. apple cider vinegar
  • 4 tbsp Lo-Fi Blueberry Jam (you can do this with ANY flavor Lo-Fi Jam)

Blend All ingredients in food processor till well combined.

Step 2 make the crust

The crust:

  • ½ cup almond flour 
  • 2 tbsps. raw cocoa powder
  • 3 tbsps. maple syrup 
  • 1 tbsp. nut butter  (I like Pecan
  • a pinch of powdered vanilla (if you have it - or a tiny splash 1/2 tsp of vanilla extract

In a bowl combine Form a dough using your hands and press into the bottom of a cupcake mold (this works for mini cupcake size cheesecake BITES too!)

Put a dollop of the blueberry in the middle and spread evenly

Top with the vegan cream cheese we just made & freeze for 12-24 hours

Pop them out of the pan, lightly defrost in the fridge before serving

Top with fresh blueberries if you have them & enjoy
