1 ¼ cup rolled oatmeal
⅓ cup peanut butter or any seed butter
1 Tbsp chia seeds
⅓ cup of your favorite Laura Ann’s Jams
Nonstick cooking spray, or oil
- Pulse oatmeal in a food processor, or blender, just to break up the oats into smaller pieces (but not into dust).
- Place oatmeal and the remainder of the ingredients (except for the cooking spray/oil) and mix until well combined. Test to see if the bites will hold together by trying to form them into a ball. Should it crumble, add an additional tablespoon and mix again.
- Use a scoop to portion out the bites. Will oiled hands, roll each into a ball. Store them in an airtight container in the fridge.
Feel free to mix in chocolate chips, chopped nuts or seeds, protein powder, coconut flakes, etc. The possibilities are endless. The amounts will vary depending on what you use, so trust your instincts and eyeball it! Enjoy!
